Visual: yellow with silver hues.
Nose: intense, first a minty nose. It opens with very pronounced citrus aromas (lemon, lime) and yellow fruits. We finally perceive spices (white pepper, clove, nutmeg, camphor).
Mouth: very strong tension, which reinforces the idea of elegance and finesse of this wine. We find again citrus notes (lemon, lime). Volume and salinity are balanced throughout the tasting, finally highlighted by spicy aromas.
Food and wine pairing: a wine to drink with “noble products”, especially seafood like shell Jacques saint (scallops) or a caviar, a salmon gravlax, cooked at low temperature or finally a salt meadow sheep from the Bay of the Somme cooked in the same way, so that the salinity is underlined and the finesse of the wine completes the volume brought by the meeting.
